Dr. Tuna Kat\u0131rc\u0131ba\u015f\u0131 ve Kalp ve Damar Cerrahisi Uzman\u0131 Do\u00e7. Dr. \u0130sa Co\u015fkun katk\u0131lar\u0131yla \u2018Beslenmenizi De\u011fi\u015ftirin Hayat\u0131n\u0131z De\u011fi\u015fsin\u2019 slogan\u0131yla e\u011fitim semineri d\u00fczenlendi. Hastalar\u0131n yo\u011fun ilgi g\u00f6sterdi\u011fi seminerde sunum yapan Diyetisyen Cansu Koluk\u0131r\u0131k, kalp hastalar\u0131n\u0131n beslenmede dikkat etmesi gereken konular hakk\u0131nda bilgi verdi.<\/p>\n<p>Diyetisyen Koluk\u0131r\u0131k, kalp ve damar hastal\u0131klar\u0131n\u0131n d\u00fcnyada \u00f6l\u00fcm nedenleri aras\u0131nda birinci s\u0131rada yer alan ciddi bir hastal\u0131k oldu\u011funu hat\u0131rlatarak, \u201cObezite kalp hastal\u0131\u011f\u0131n\u0131n en \u00f6nemli ikinci nedenidir. Kalp ve damar hastal\u0131klar\u0131n\u0131n temelinde ateroskleroz yani damar sertle\u015fmesi vard\u0131r. Damar sertle\u015fmesi sigara, obezite, diyabet gibi nedenlerle hasar g\u00f6ren damarda kanda ta\u015f\u0131nan kolesterol\u00fcn birikmesiyle damar\u0131 t\u0131kamas\u0131 olay\u0131d\u0131r. Kan kolesterol\u00fc y\u00fcksekli\u011fi b\u00f6ylece damar t\u0131kan\u0131klar\u0131na yol a\u00e7ar. Obez bireylerde kalp damar hastal\u0131\u011f\u0131 geli\u015fme riski y\u00fcksektir. \u00c7\u00fcnk\u00fc obez bireylerin v\u00fccutlar\u0131nda fazladan kolesterol \u00fcretilir ve \u015fi\u015fmanl\u0131k kan kolesterol\u00fcnde art\u0131\u015fa, damar hasar\u0131 gibi zararlara yol a\u00e7ar. Bypass veya stent ameliyat\u0131 ile daralm\u0131\u015f veya t\u0131kal\u0131 damarda kan ak\u0131m\u0131 yeniden sa\u011flan\u0131r. Ameliyat sonras\u0131 koruyucu tedbirler al\u0131nmaz ise bypass damarlar\u0131nda da tekrar t\u0131kan\u0131kl\u0131k olu\u015fabilir. Bu da ciddi bir problemdir. Bir anlamda; mevcut ya\u015fam tarz\u0131 de\u011fi\u015ftirilmezse damar t\u0131kan\u0131kl\u0131\u011f\u0131 tekrarlama riski y\u00fcksektir\u201d diye konu\u015ftu.<\/p>\n<p>\u201cBESLENMEM\u0130Z\u0130 DE\u011e\u0130\u015eT\u0130RMEYE YA\u011eLARDAN BA\u015eLAYALIM\u201d<\/p>\n<p>\u00d6ncelikle iyi ya\u011flar\u0131n ve k\u00f6t\u00fc ya\u011flar\u0131n etkilerinin bilinmesi gerekti\u011fine dikkat \u00e7eken Koluk\u0131r\u0131k, \u201cZeytinya\u011f\u0131, f\u0131nd\u0131k ya\u011f\u0131, m\u0131s\u0131r\u00f6z\u00fc ya\u011f\u0131, bal\u0131k, cevizde bulunan doymam\u0131\u015f ya\u011flar \u2018iyi\u2019 ya\u011flar\u0131n kaynaklar\u0131d\u0131r. Hayvansal ya\u011flar ve trans ya\u011flar ise kalbe iyi gelmeyen kolesterol\u00fc y\u00fckselten ya\u011flard\u0131r. Yemek yaparken ve haz\u0131rlarken sa\u011fl\u0131kl\u0131 ya\u011flar kullan\u0131n. \u0130lk tercihimiz  zeytinya\u011f\u0131, f\u0131nd\u0131k ya\u011f\u0131, kanola ya\u011f\u0131 olmal\u0131d\u0131r. 2. tercihimiz  ay\u00e7i\u00e7ek ya\u011f\u0131, m\u0131s\u0131r\u00f6z\u00fc ya\u011f, trans ya\u011f i\u00e7ermeyen yumu\u015fak margarinler olmal\u0131d\u0131r. Tereya\u011f, kat\u0131 ya\u011f, sert margarinler yanl\u0131\u015f se\u00e7imlerdir, uzak durulmal\u0131d\u0131r. Yemek yaparken bir \u00f6l\u00e7\u00fc zeytinya\u011f\u0131, bir \u00f6l\u00e7\u00fc ay\u00e7i\u00e7ek ya\u011f\u0131 gibi kar\u0131\u015ft\u0131rarak da kullanabilirsiniz. Ya\u011f \u00e7e\u015fidinden \u00e7ok miktar\u0131 da \u00f6nemlidir. Fazla ya\u011f t\u00fcketimi, zeytinya\u011f\u0131 da dahil kalp ve damar sa\u011fl\u0131\u011f\u0131na zarar verir, kilo al\u0131m\u0131na yol a\u00e7ar\u201d ifadelerini kulland\u0131.<\/p>\n<p>\u201cKIRMIZI ET M\u0130 BEYAZ ET M\u0130?\u201d<\/p>\n<p>Diyetisyen Koluk\u0131r\u0131k, k\u0131rm\u0131z\u0131 et yerine bal\u0131k, tavuk ve hindi eti tercih edilmesini \u00f6nererek, \u201c\u00c7\u00fcnk\u00fc k\u0131rm\u0131z\u0131 et doymu\u015f ya\u011f ve kolesterol i\u00e7eri\u011fi y\u00fcksektir. Beyaz etin k\u0131rm\u0131z\u0131 ete oranla protein i\u00e7eri\u011fi daha y\u00fcksek olup kolesterol i\u00e7eri\u011fi d\u00fc\u015f\u00fckt\u00fcr. K\u0131rm\u0131z\u0131 et t\u00fcketimi haftada 2\u2019yi ge\u00e7memelidir. Yumurtan\u0131n beyaz\u0131nda kolesterol yoktur. Yumurta beyaz\u0131 y\u00fczde 100 proteindir. Ancak yumurta sar\u0131s\u0131 kolesterolden zengindir. Kalp ve damar hastal\u0131\u011f\u0131 olanlar i\u00e7in haftada 2-3 kez t\u00fcketilebilir. Kahvalt\u0131larda ha\u015flanm\u0131\u015f olarak tercih edilmelidir. Bitkisel protein kayna\u011f\u0131d\u0131r. Mercimek, kuru fasulye, nohut, barbunya gibi kurubaklagiller demir, \u00e7inko, magnezyum minerallerinden zengindir. Bu mineraller kalbin daha iyi \u00e7al\u0131\u015fmas\u0131na, kan bas\u0131nc\u0131n\u0131n d\u00fc\u015fmesine yard\u0131mc\u0131 olur. \u00d6zellikle k\u0131\u015flar\u0131 sofralar\u0131m\u0131zda zeytinya\u011fl\u0131 yemek veya \u00e7orba olarak s\u0131k\u00e7a tercih edilebilir. Kurubaklagil yeme\u011fi etli yap\u0131lacaksa da m\u00fcmk\u00fcn oldu\u011funca etin az konulmas\u0131 ve az ya\u011f eklenmesi, hatta yeme\u011fe ya\u011f eklenmeden etin kendi ya\u011f\u0131yla pi\u015firilmesi kalp sa\u011fl\u0131\u011f\u0131 i\u00e7in en do\u011fru se\u00e7imdir\u201d \u015feklinde konu\u015ftu.<\/p>\n<p>\u201cS\u00dcT VE \u00dcR\u00dcNLER\u0130NDE AKILLICA SE\u00c7\u0130MLER YAPILMALIDIR\u201d<\/p>\n<p>Do\u011fru t\u00fcketmeyen s\u00fct ve s\u00fct \u00fcr\u00fcnlerinin yararlar\u0131ndan \u00e7ok zararlar\u0131n\u0131n oldu\u011funun alt\u0131n\u0131 \u00e7izen Koluk\u0131r\u0131k, \u201cS\u00fct, yo\u011furt, ayran kalsiyum ve protein kayna\u011f\u0131d\u0131r. Kemik, di\u015f ve kalp sa\u011fl\u0131\u011f\u0131 i\u00e7in \u00f6zellikle g\u00fcnde en az  2-3 porsiyon s\u00fct ve \u00fcr\u00fcnlerini \u00f6neriyoruz. Ancak s\u00fct ve \u00fcr\u00fcnlerini tam ya\u011fl\u0131 kullanmak kanda kolesterol ve k\u00f6t\u00fc kolesterol\u00fc y\u00fckseltir. Kalp sa\u011fl\u0131\u011f\u0131n\u0131 olumsuz etkiler. S\u00fct ve \u00fcr\u00fcnlerini mutlaka ya\u011fs\u0131z , az ya\u011fl\u0131 t\u00fcketin. Light s\u00fct demek normal s\u00fcte g\u00f6re ya\u011f\u0131 azalt\u0131lm\u0131\u015f s\u00fct demektir. Ayn\u0131 \u015fey yo\u011furt i\u00e7in de ge\u00e7erlidir. Kalsiyum de\u011feri ayn\u0131d\u0131r. \u0130\u00e7eri\u011findeki protein sayesinde tok tutucu \u00f6zelli\u011fi vard\u0131r. T\u00fcrk G\u0131da Tebli\u011fine g\u00f6re light s\u00fct ve yo\u011furt tatland\u0131r\u0131c\u0131 ve katk\u0131 maddeleri i\u00e7ermez\u201d dedi.<\/p>\n<p>\u201cTAM TAHILLAR L\u0130F KAYNA\u011eI\u201d<\/p>\n<p>Koluk\u0131r\u0131k, \u201cKalp-damar hastalar\u0131 ve \u015feker hastalar\u0131 \u00f6zellikle tam tah\u0131l \u00fcr\u00fcnleri kullanmal\u0131d\u0131r. Beyaz ekmek yerine kepekli ekmek, tam bu\u011fday ekme\u011fi, \u00e7avdar veya yulaf ekme\u011fi al\u0131n. Tam tah\u0131l \u00fcr\u00fcnleri y\u00fcksek oranda lif i\u00e7erir. Lifli g\u0131dalar da kolesterol\u00fcn d\u00fc\u015fmesini ve kan \u015fekerin d\u00fczenlenmesini sa\u011flar. Pirin\u00e7 yerine bulgur tercih edilmelidir. Yemeklerin yan\u0131nda pilav, makarna yerine tam bu\u011fday ekme\u011fi, kepekli ekmek yemek hem daha az kalori almam\u0131z\u0131 sa\u011flar, hem de zay\u0131flamaya yard\u0131mc\u0131 olur\u201d diye konu\u015ftu.<\/p>\n<p>G\u00fcnde en az 5 porsiyon sebze ve meyve t\u00fcketilmesini \u00f6neren Koluk\u0131r\u0131k, \u201cSebze ve meyveler; besin \u00f6\u011feleri a\u00e7\u0131s\u0131ndan zengin, d\u00fc\u015f\u00fck kalorili ve y\u00fcksek liflidir. Sebze ve meyvelerden g\u00fcnl\u00fck gereksinim duyulan vitamin ve minerallerin bir\u00e7o\u011funu alabilirsiniz. G\u00fcn i\u00e7erisinde yeterli sebze-meyve t\u00fcketmek kan bas\u0131nc\u0131n\u0131n d\u00fc\u015fmesine yard\u0131mc\u0131 olur ve kalp krizi ge\u00e7irme riskini azalt\u0131r. Ayr\u0131ca tok tutma dereceleri y\u00fcksek oldu\u011fu i\u00e7in zay\u0131flamaya yard\u0131mc\u0131 olur. Ya\u015flanmay\u0131 \u00f6nleyici antioksidantlar\u0131 bolca i\u00e7eren sebzeler ve meyveler kalbe en iyi gelen besinlerdir. Yemeklerin yan\u0131na mutlaka salata haz\u0131rlay\u0131n. Sebze yemeklerini etli de\u011fil zeytinya\u011fl\u0131 yap\u0131n. Meyveleri meyve suyu olarak de\u011fil kendisini t\u00fcketin\u201d ifadelerini kulland\u0131.<\/p>\n<p>\u201c\u015eEKER VE TUZ T\u00dcKET\u0130M\u0130NE D\u0130KKAT\u201d<\/p>\n<p>\u015eeker ve tuz t\u00fcketiminde de hastalara \u00f6nemli bilgiler veren Koluk\u0131r\u0131k, \u201cG\u00fcnl\u00fck tuz s\u0131n\u0131r\u0131 6 gram iken, T\u00fcrkiye\u2019de t\u00fcketilen g\u00fcnl\u00fck tuz miktar\u0131 18 gramd\u0131r. Tuz t\u00fcketiminin zararlar\u0131 say\u0131lamayacak kadar \u00e7oktur. Kalp i\u00e7in tehlikelidir, kan bas\u0131nc\u0131n\u0131 artt\u0131r\u0131r, \u00e7arp\u0131nt\u0131ya neden olur. Hipertansiyon hastalar\u0131 \u00fczerinde yap\u0131lan bir \u00e7al\u0131\u015fmada tuz kullan\u0131m\u0131 b\u0131rak\u0131larak ve ya\u015fam tarz\u0131 de\u011fi\u015fiklikleriyle tansiyonun normal seviyelere indi\u011fi g\u00f6zlemlenmi\u015ftir. Sofran\u0131zdan tuzlu\u011fu kald\u0131r\u0131n. Yemeklere tuz atma al\u0131\u015fkanl\u0131\u011f\u0131n\u0131 b\u0131rak\u0131n. Tuz yerine so\u011fan, sar\u0131msak, baharatlar, limon, sirke,  biber gibi do\u011fal lezzetlendiricileri kullan\u0131n. \u015eekerin hi\u00e7bir besin de\u011feri yoktur. \u00c7ikolata, kek, gofret gibi haz\u0131r sanayi g\u0131dalar\u0131 ve kola, ice tea meyve suyu i\u00e7eceklerin i\u00e7eri\u011findeki \u015feker ve glikoz \u015furubu \u00e7e\u015fitleri kan \u015fekerini h\u0131zla y\u00fckseltir.
