Yerel k\u00fclt\u00fcr\u00fc tan\u0131tma, gen\u00e7lere benimsetme konusunda ara\u015ft\u0131rmalar yap\u0131p, yerelde uzmanla\u015fm\u0131\u015f b\u00fcy\u00fckleri ile g\u00f6r\u00fc\u015ferek \u201cSoframda ki Co\u011frafya\u201d  ad\u0131 ile haz\u0131rlad\u0131klar\u0131 projeleri T\u00fcrkiye 3.s\u00fc oldu.<\/p>\n<p>13 y\u0131ll\u0131k \u00f6\u011fretmen olan, 3 y\u0131ldan beri \u00d6mer Nasuhi Bilmen Ortaokulunda g\u00f6rev yapan,  \u00f6zellikle k\u0131z \u00e7ocuklar\u0131n\u0131n e\u011fitimi ile ilgili bir\u00e7ok proje y\u00fcr\u00fcten, bilim dergileri \u00e7\u0131kar\u0131p Bilim \u015fenlikleri d\u00fczenleyen. T\u00dcB\u0130TAK proje yar\u0131\u015fmalar\u0131nda Erzurum ad\u0131na tek birinciliklerin sahibi, 2013 ve 2019 y\u0131l\u0131nda iki kez y\u0131l\u0131n \u00f6\u011fretmeni se\u00e7ilen Dan\u0131\u015fman Tuba Dumlu G\u00fcler \u201c\u00d6\u011frencilerimiz ile yapt\u0131\u011f\u0131m\u0131z isti\u015fareler sonucunda tamamen onlar\u0131n fikir ve istekleri do\u011frultusunda konu belirlenerek proje haz\u0131rland\u0131. K\u00fclt\u00fcrel Miras\u2019 ve \u2018Sa\u011fl\u0131kl\u0131 Beslenme\u2019 tematik alanlar\u0131n\u0131n \u201cSoframdaki Co\u011frafya\u201d isimli projemiz ile 12- 14 ya\u015f aras\u0131 gen\u00e7lerde co\u011frafya okuryazarl\u0131\u011f\u0131n\u0131n geli\u015fmesi amac\u0131yla belli bir b\u00f6lgedeki yemek k\u00fclt\u00fcr\u00fcn\u00fcn o b\u00f6lgenin co\u011frafi konumu, iklim, tar\u0131m ve hayvanc\u0131l\u0131k ile ili\u015fkilendirilmesi, geli\u015fen teknoloji ile haz\u0131r g\u0131da ve paketlenmi\u015f \u00fcr\u00fcnlerin t\u00fcketiminin art\u0131\u011f\u0131 bu d\u00f6nemde yeni nesil \u00e7ocuklar\u0131n ve gen\u00e7lerin sa\u011fl\u0131kl\u0131 beslenmesi i\u00e7in k\u00fclt\u00fcrel miras\u0131m\u0131z olan y\u00f6resel yemekleri tan\u0131ma ve bilmeleri i\u00e7in fark\u0131ndal\u0131k olu\u015fturulmas\u0131 ama\u00e7land\u0131. Ayr\u0131ca Zekiye \u00c7omakl\u0131 gibi y\u00f6resel mutfa\u011f\u0131n uzmanlar\u0131 ile irtibat kurup \u00f6\u011frencilerimizle bir araya getirerek y\u00f6resel yemeklerin ortaya \u00e7\u0131kmas\u0131 veya k\u00fclt\u00fcrel miras olarak kabul g\u00f6rmesini sa\u011flayan hik\u00e2yeler ve toplumsal ili\u015fkilerin mutfak k\u00fclt\u00fcr\u00fcne yans\u0131malar\u0131 be\u015feri faaliyetler olarak \u00f6\u011frencilerimize aktar\u0131ld\u0131 ve projemiz \u00f6nce B\u00f6lge birincisi ard\u0131ndan T\u00fcrkiye 3. c\u00fcs\u00fc olarak gurur duymam\u0131za vesile oldu.<\/p>\n<p>Projenin belli a\u015famalar\u0131nda 100 ki\u015filik bir gruba bu konuda uzman olan ve Erzurum y\u00f6re mutfa\u011f\u0131 ilgili \u201cKarlar \u00dclkesinin Damak Tad\u0131- Erzurum Y\u00f6re Mutfa\u011f\u0131\u201d isimli kitab\u0131 bulunan Ara\u015ft\u0131rmac\u0131-Yazar Zekiye \u00c7omakl\u0131\u2019n\u0131n tavsiyeleri do\u011frultusunda 32 adet y\u00f6resel lezzet i\u00e7eren \u2018Erzurum Mutfa\u011f\u0131nda Yer Alan Y\u00f6resel Yemekleri tan\u0131ma ve Tatma Durumu Ara\u015ft\u0131rmas\u0131\u2019 yap\u0131lm\u0131\u015f ve gen\u00e7ler taraf\u0131ndan bilinmeyen ve tad\u0131lmayan yemekler belirlendi. Okulum, \u00f6\u011frencilerim ve \u015fahs\u0131m ad\u0131na yerele bu kadar de\u011fer verdi\u011fi i\u00e7in kendisine \u015f\u00fckran bor\u00e7luyuz. Ayr\u0131ca mutfak k\u00fclt\u00fcr\u00fcne yans\u0131yan co\u011frafya kavramlar\u0131na dikkat \u00e7ekilerek, \u00f6\u011frencilere co\u011frafya okuryazarl\u0131\u011f\u0131 kazand\u0131r\u0131lm\u0131\u015ft\u0131r.\u201d diye konu\u015ftu.<\/p>\n<p>Ara\u015ft\u0131rmac\u0131-yazar Zekiye \u00c7omakl\u0131 ise, \u201cToplumun her kesimi kendi ya\u015fad\u0131\u011f\u0131 b\u00f6lgedeki olaylar\u0131 co\u011frafya kapsam\u0131nda daha iyi anlay\u0131p yorumlamak ister. \u0130nsano\u011flu bulundu\u011fu co\u011frafyan\u0131n tar\u0131m ve hayvanc\u0131l\u0131k \u00f6zelli\u011fi, iklimi, co\u011frafi konumu, \u00fcretim \u015fekli, sosyal ve k\u00fclt\u00fcrel ili\u015fkiler o b\u00f6lgedeki halk k\u00fclt\u00fcr\u00fc ile bir araya gelerek toplumun k\u00fclt\u00fcrel miras\u0131 olan y\u00f6resel yemeklerine de \u00e7ok \u00f6nem vermelidir.<\/p>\n<p>G\u00fcn\u00fcm\u00fczde Gastronomi sadece yeme i\u00e7me ile ilgili olmay\u0131p bir mutfak k\u00fclt\u00fcr\u00fc ve yemek yapma sanat\u0131na d\u00f6n\u00fc\u015ft\u00fc. Ne yaz\u0131k ki, son y\u0131llarda teknolojinin h\u0131zl\u0131 geli\u015fmesi gen\u00e7leri haz\u0131r g\u0131daya y\u00f6nlendirerek, yeni nesillerin geleneksel g\u0131dalar\u0131n ve y\u00f6resel yemeklerin t\u00fcketimini tamamen azaltm\u0131\u015f ve en ac\u0131 y\u00f6n\u00fc k\u00fclt\u00fcrel de\u011ferler kaybolmaya ba\u015flam\u0131\u015ft\u0131r. Bu \u00e7al\u0131\u015fma \u00f6\u011frencilerde co\u011frafya okuryazarl\u0131\u011f\u0131n\u0131n geli\u015fmesi ve y\u00f6resel gastronomi konusunda fark\u0131ndal\u0131k olu\u015fmas\u0131 amac\u0131yla yap\u0131lm\u0131\u015f olup y\u00f6resel yemeklerin nesilden nesle aktar\u0131lacak olan bir k\u00fclt\u00fcrel miras oldu\u011fu konusunda bilin\u00e7lenmeleri sa\u011flanm\u0131\u015ft\u0131r.
