Tur\u015fu vurmak isteyenler k\u00fcplere tur\u015fu kurar. Tur\u015fuya koku vermesi i\u00e7in katmak isteyenler i\u00e7in i\u00e7ine reyhan da katabilir. Tur\u015fu olduktan sonra \u00c7ortutu pancar\u0131 yap\u0131l\u0131r. Bir miktar \u015falgam tur\u015fusuna, bir \u00f6l\u00e7ek pirin\u00e7 veya bulgur kat\u0131l\u0131r, ayr\u0131ca par\u00e7a et veya kavurma ile pi\u015firilir. \u015ealgam tur\u015fusuna &#8220;\u00e7ortutu&#8221; tur\u015fusundan yap\u0131lan bu pancara da &#8220;\u00e7ortutu pancar\u0131&#8221; denir. Eski ve yerel\u00a0<strong class=\"searchword\">Erzurum<\/strong>\u00a0a\u011fz\u0131 ile \u00e7ortutu bir pancar \u00e7e\u015fididir. Su b\u00f6re\u011fi gibi, ca\u011f kebab\u0131 gibi, mant\u0131 gibi, bunlar\u0131n aras\u0131na \u015fimdi de a\u015fmal\u0131 yahni tescillendi.
